My Favorite Recipe (no cooking needed!)

People often ask me what I eat. My favorite dish at the moment is an acai bowl, which I make at home for breakfast every day. It is filling, healthy and yummy. It could even be decadent, dependent on what toppings you add to it! Not only does it taste delicious, but it also allows me to incorporate so many fruits and vegetables easily into my diet. At last count, I was putting 14 healthy ingredients into my high speed blender to make the acai base. Here is my recipe:

  • 1 frozen acai pack (found in the freezer section health food stores, and at some conventional groceries)
  • 3 chard leaves (destemmed)
  • 4 kale leaves (destemmed)
  • 2 florets broccoli
  • frozen blueberries (about ¼ cup)
  • 6 frozen strawberries
  • ¼ cup frozen mangoes
  • ⅓ – ½ banana
  • 2 tsbspn ground psyllium husks
  • 2 tbspsn ground flaxseeds
  • 1 tsp ground Vietnamese cinnamon
  • 1 carrot
  • a dash of turmeric (a cancer fighting spice- but add very little as the taste can be strong)
  • 1 serving vanilla vegan protein powder

Add about 1/8 cup water and start blending! Blend it to the consistency of a very smooth pudding, then pour into a bowl. I add 1/2 cup granola or a low calorie, high fiber cereal that adds crunch. You can also add fresh fruit on top. It is SO delicious that I often make a second one later in the day! Have fun experimenting with whatever variety of fruits and vegetables you have in your fridge. I always add the banana (for sweetness and texture) but everything else is changeable!
